In the sit and go tourneys, players sit at one table only. The tournament begins once the table is full. In the multi table tournaments, many players are allowed to play which means you can have several tables playing at the same time. As the games progresses, players will be eliminated with fewer players remaining at the tables, the players are moved to other tables until at the end, only one table is left.
